I’m trying to eat more vegetarian meals, so I’m obsessed with beans. And the bean recipes I’ve been making have made it incredibly easy. I thought I would feel less satisfied without having meat as part of my dinner, but beans fill me right up. Since they’re packed with fiber I never feel hungry after a meal. And my wallet isn’t suffering either—a can of beans is much cheaper than a pound of chicken or beef (and a pound of dried beans is even less expensive!). Now that’s what I call satisfaction. Here are a few of my favorite vegetarian recipes with beans... Read More »

Hey guys! Remember how I told you last Monday after running the 10K that I was going on a week-long challenge? After 11 weeks on Body by Glamour, I felt like my body was becoming resistant to weight loss. And food complacency was definitely settling in, so to shake things up a bit, I issued myself the challenge: To follow the Body by Glamour plan to the letter. I tried my hardest and although I had a couple of slip-ups, (involving Skinny Cow ice cream and a few pieces of chocolate) I was intentional about what I ate all week. And I had a real epiphany when I got on the scale yesterday… Read More »

It was a plate of Navy beans, that almost separated our family! Mom had cooked dinner and this dinner consisted of Navy beans. I had a special power as a child, to have the ability to look at certain foods and know, I wasn't going to like them. My mom still had this insane rule though, taste it… Read More »

Some people can’t get behind cilantro. I’m not one of them. Furthermore, give me an avocado, some lime juice, and a jalapeno and I will be beyond delighted. What I love about Mexican food is its freshness of herbs and crunchy lettuce, followed by a swift kick of heat. There… Read More »
